Drumstick Sambar

Sambar was one of the first dishes I remember learning from my sister. While I don’t remember that exact version, I have arrived at this recipe after a lot of trial and error. Hope you enjoy eating this as much as I do!

Drumstick Sambar


Toor dal – 1 cup
Drumsticks – 4
Tomato – 1
Garlic – 4 cloves
Onion – 1 medium-sized
Green chillies – 2
Turmeric – 1/2 tsp
Sambar powder – 1 tbsp
Tamarind – 1-inch piece
Fresh Coriander – 1/2 cup

To temper:
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Urad dal – 1 tsp
Fenugreek seeds – 1/4 tsp
Dry red chilli – 2
Curry leaves


  • Soak the tamarind in water
  • Wash the toor dal at least 5 times and then transfer to a cooker
  • Add about 2 cups of water, chopped tomato and crushed garlic cloves
  • Pressure cook for 3 whistles
  • In a wok, heat oil and add finely chopped green chillies and onions
  • Once the onions turn translucent, add turmeric and sambar powder along with chopped drumsticks
  • Cook this till the raw smell of the masalas leave
  • Once done, add this to the cooked dal along with salt and tamarind extract
  • Pressure cook for one whistle
  • Temper the dal with ingredients mentioned and garnish with fresh coriander
  • Serve hot with rice
