Masala Egg Fry

I learnt this recipe just last week from my mother who is visiting me here in Austin. This is a quick and easy egg recipe that can be easily scaled up or down.

Ingredients:

Eggs, hard-boiled and peeled – 4
Onion, finely chopped – 1/2 cup
Dhania powder – 1 tsp
Chilli powder – 1 tsp
Turmeric – 1/2 tsp
Garam masala – 1/2 tsp
Pepper powder – 1/4 tsp
Jeera powder – 1/4 tsp
Oil – 3 tbsp
Salt – to taste

Method:

  • Halve the eggs lengthwise. Set aside
  • Heat 2 tbsp of oil in a pan and add the chopped onions
  • Saute until the onion turns golden brown and slightly crisp. Remove from pan and set aside
  • In the same pan, heat the remaining tablespoon of oil
  • Add dhania powder, chilli powder, turmeric, garam masala, pepper powder, jeera powder and salt and mix well
  • Place the eggs in the pan and coat with the masala
  • Leave the eggs in the pan on medium heat for 2 minutes on each side
  • Transfer to a serving dish
  • Garnish with the sauted onions
