Nigella Lawson’s Everyday Brownies

I am an ardent Nigella Lawson fan! I love her style of cooking, her presentation, her TV shows and just about everything else that has to do with her! While her recipes do feel a bit daunting and over-the-top, I found this one to be fairly straightforward. (I have made adjustments to some of the quantities, however) Whether it’s a birthday party, a hostess gift or just a Saturday evening, these brownies are sure to lift your spirits! Nigella Lawson's Everyday Bronwnies


Unsalted butter – 10 tbsp
Sugar – 3/4 cup
Unsweetened cocoa powder – 1 cup
All-purpose flour/Maida – 1 cup
Baking Soda – 1 tsp
Salt – a pinch
Eggs – 4
Vanilla extract – 1 tsp
Chocolate chips – 3/4 cup


  • Pre-heat the oven to 375 degrees Fahrenheit
  • Prepare a 13 x 9 x 2 inch foil pan or line one with butter paper
  • In a saucepan, melt the butter on low heat
  • Once it is melted, add the sugar, stirring with a wooden spoon
  • As the sugar melts, in a separate bowl combine cocoa powder, all-purpose flour, baking soda and salt and mix well
  • Add this mixture to the saucepan and mix well
  • Remove from heat
  • In a bowl, whisk the four eggs with vanilla extract and pour this into the above mixture
  • Stir in the chocolate chips 
  • Pour this mixture into your baking pan and spread using a spatula
  • Bake for 20 to 25 minutes
  • Place the pan on a cooling rack and allow to cool for a while before cutting into 16 pieces
  • Store them in an air-tight container and keep in the refrigerator; they taste even better cold
  • Enjoy your brownies as is or with a scoop of vanilla ice cream!
