Oven-roasted Zucchini

Zucchini is one of my favorite vegetables and I buy it any chance I get. This is a no-fuss recipe and don’t fret if you don’t have an oven. You could just fry the zucchini in a pan using a tablespoon of oil. It goes perfectly as a side with my Tilapia Fish Fry.

Oven-Roasted Zucchini


Zucchini – 1
Salt to taste
Pepper powder – 1 tsp
Chilli flakes – 1/2 tsp (optional)


  • Pre-heat the oven to 400 degrees Fahrenheit
  • Line a baking tray with wax paper or aluminium foil and spray it with oil
  • Cut the zucchini into thin slices and line on the tray
  • Spray oil and sprinkle with salt, pepper and chilli flakes
  • Flip the slices and do the same on the other side but do not spray oil
  • Place on top-rack of oven and bake for 20 to 25 minutes
  • Oven-roasted zucchini tastes yum with baked fish or chicken
