Steamed Vada Curry

Vada curry is a popular side dish from Tamilnadu served with idlis or dosas. It is typically made using deep fried vadas.This is a healthier version of the same where the vada is steamed.

Channa dal/ Kadalai paruppu – 1 cup
Green chillies – 3
Saunf/ Fennel seeds – 1 tsp
Ginger, finely chopped – 1 tsp
Cinnamon – 1/2 inch piece
Cloves – 2
Garlic, crushed – 5 to 6 cloves
Onion, finely chopped – 3/4 cup
Tomato, finely chopped – 1/2 cup
Coriander leaves, finely chopped – 2 tbsp
Turmeric powder – 1/2 tsp
Chilli powder – 2 tsp
Dhania powder – 2 tsp
Oil – 2 tbsp
Salt – to taste


  • Soak the channa dal in water for at least 1 hour
  • Grind the dal with green chillies, saunf, ginger and salt. Do not add any water. The dal would have soaked enough water to make a nice wet dough
  • Roll the mixture into a ball and place it in a deep pan. Pour water around it slowly just enough to cover the mixture half way through
  • Place on medium heat. Cover and cook for 15 minutes
  • Remove from heat and drain the excess water. Save this water for later
  • Cut the steamed vada mixture into small pieces and set aside
  • Heat oil in a pan. Add cinnamon, cloves and garlic
  • Add chopped onion and saute for 5 minutes
  • Add tomato, coriander leaves, turmeric, chilli powder, dhania powder and salt. Saute for another 3-4 minutes
  • Add the vada pieces and the leftover water from steaming. Add more water if needed
  • Cook on medium heat for another 6 to 8 minutes
  • Serve hot with idlis or dosas
