Vazhaikkai Varuval (Plantain Fry)

This is a simple and everyday recipe using plantains which are called Vazhaikkai in Tamil. The ones we get here in the US are slightly sweeter than the ones we get in India, but nevertheless, they taste good!

Vazhaikkai Varuval

Ingredients:

Vazhaikkai/plantain – 2
Onion – 1 cup
Tomato – 1/3 cup
Garlic, crushed – 1tbsp
Ginger, crushed – 1/4 tsp
Turmeric – 1/4 tsp
Chilli powder – 2 tsp
Dhania powder- 2 tsp
Salt – to taste
Oil – 4 tbsp

Method:

  • Peel the plantains and cut them into 1/4 inch slices
  • Add all the remaining ingredients except the oil along with the sliced plantains into a deep pan
  • Add water just enough to cover the plantains
  • Cover and cook on medium to high heat until the plantains are fork tender
  • In case there is more water left in the pan, remove cover and leave on high heat for a few minutes until most of the water is absorbed
  • Heat 1 tbsp of oil in a non-stick pan or tawa and place on medium to high heat
  • Spread out some of the plantain slices along with the masala. Make sure they do not overlap
  • Depending on the size of your pan, you might want to fry the plantains in batches
  • Add extra oil around the edges if needed
  • Fry the slices approximately for 5 minutes on each side, making sure that the masala does not get burnt
  • Serve with rice and dal
